 Just for kicks.... Let's see how many different kinds of omelettes we can come up with if we each suggest one kind, my suggestion is mushrooms and mozza. Next....

| Refried beans, extra-chunky salsa (with a bit of extra cumin, and cilantro if there's any about) and Cheddar or Jack cheese, with corn kernels in the egg mixture. A bit of yogourt cheese or sour cream inside is also good. Favourite breakfast item, round this way. |

| 101 omelettes. How? cause as a kid I once gave my father a book by this title. Spanish omelette Omelettesoufflée Omellette stuffed with: peppers, mushrooms, onions, leeks, truffles, ham and cheese, tomato, cheese.....

| Foodnfoto, that would be mine, too. I also vote for very sharp cheddar with sauteed crimini mushrooms; or sauteed leeks with prosciutto. Cook in lots of good butter!
