Refried beans, extra-chunky salsa (with a bit of extra cumin, and cilantro if there's any about) and Cheddar or Jack cheese, with corn kernels in the egg mixture. A bit of yogourt cheese or sour cream inside is also good.

Favourite breakfast item, round this way.

Foodnfoto, that would be mine, too.

I also vote for very sharp cheddar with sauteed crimini mushrooms; or sauteed leeks with prosciutto. Cook in lots of good butter!
