| Anyone like papillotes? I love making them... It's a great fish special... The presentation is fabulous. When the server opens them at the table the aroma is wonderful. Easy fire item, great presentation.. and fun. Sort of a French TV dinner! We served a great on tonight for the special with a lemon sole over jasmine rice with shiitakes, pickled carrots and baby bok choy... with a Yuzu vinaigrette... MMMM. |

| I love doing en papillote(spell check that one too). Its a great item for line service and banquet service as well, just make sure your cooks are skilled enough to tell the doneness without ripping open one corner. |

| It seems that everyone that does papillotes, including myself, always does fish. What things, other than fish, have people put in their papillotes? |

| It would be difficult to cook chicken in a papillote as it would take too long... Meats wouldn't been seared... Steamed meat just doesn't work for me! I often do veggie plates en papillote for a nightly special. It's nice because you can include a sturdy grain and it absorbs some wonderful flavors from everything inside. Fish is the best way to use these as it's virtually impossible to overcook and you can cut it into medallions for presentations. Scallops work well, too. I think I've tried everything! |
