| Talk to me about the word macerated I once served a citron granita with what I called marinated blackberries(in Cream d'Casis). The chef changed the menu to read macerated blackberries. My argument was that marinated sounded more palatable than macerated. Maybe that's why many chefs use improper terms. The menu was printed with macerated,but I won the debate because several of our customers thought the berries were thrown in a blender before serving. |
