Default looking for some creative ideas

I stopped by the farmers market the other day and bought some pretty random stuff. I was thinking, I wonder if I can put this all into one meal. I dont think I could put it all in one dish, but possibly, with a little creativity, I could. Here is what I bought.

Beets
Carrots in all colors
Jalapenos
Blueberries
Peas ( I could eat these all day raw out of the pod, so delicious!)

I was thinking maybe grilling or roasting a chicken and using the jalapenos and blueberries in a BBQ sauce and roasting the veggies and serving them over the beet greens, but roasting the veggies just seems too traditional, i want something new and different. That and chicken is way over used, I like other meats better if you can think of a better, readily accessible meat to use.

Let me know what you think! THANKS

Green Pea Borscht with Blueberry Jalapeno Pierogi

Add Peas to a traditional Borscht. This is a bright red central European soup that uses chopped beet root and carrots. If I were adding peas I might leave out potato.

Stuff your Pierogi with a filling of crushed blueberries, jalapeno, and cream cheese. I might serve the pierogi right in the soup.
