OKies, I hope you refer to the BIG ones, though the small ones are great grilled whole with just a light coat of salt, pepper, honey and garlic.... but when I catch a decent sized Occy, I like it best cold and pickled.
First you have to skin the Octopus legs..... i use the head for crab bait.... and then steam them for about an hour. At the same time, in a pot heat enough white wine vinegar to cover the octopus bit in a jar.......... a bit of sugar, a couple cloves of garlic and a chopped up chilli pepper and you are nearly there. when the octupus is steamed, cut it up and put in a jar, cover with the vinegar mixture and add in a splash of balsamic vinegar if you like..... try it... its nice

I HAD A GOOD RECIPE FROM A GREEK TRAD. COOK BOOK.
PICKLED OCTOPUS
(chtapodi toursi)

1 octopus
2 cups water
2 cups of vinigar
10 peppercorns
oil
wash and cut octopus
put the octopus on heat stir until the moisture
has been absorbed, then add 2 cups of water and allow to boil.
When the water is absorbed add the vinigar and peppercorns, allow to boil until all the vinigar is absorbed.
When cool put the octopus in a jar cover with oil.
