I just mode a lavendar creme brulee, and it was the standard recipe with an infusion of lavendar. It was awesome. And last year I did a poached halibut with lavendar, fava beans, and baby carrots dish that I enjoyed very much. What other neat things can we do with lavendar?

First thing - herbal infusion. Great when added to mint, rosemary flowers and sage. Second, although it is a kind of cooking method - simmering - it doesn't apply to your request. But what the heck - Bath! Add an infusion of 4-6 lavender flower to a hot bath. Relaxes the muscles after a hard day on the line! BTW Also add an infusion of rosemary and thyme for relaxion(And cloves as an aphrodasiac) to your bathtub.

I simmer French lavendar in simple syrup and make sorbet. I garnish it with a puree of fresh cherries mixed with a bit of the simmered lavendar leaves.

Try infusing oil with lavender, I use the oil to flavor zabaglione and summer caramels. Also lavender and sea salt to soak in after a long day...... [This message has been edited by m brown (edited April 24, 2000).]

There was an article published in Chicago a few years back... It was a smell test that was conducted with men to determine what enticed "his libido"... Lavendar and pumpkin were at the top of the list... so At my restaurant we served pumpkin soup infused with lavendar for a week accompanied by a copy of the article!

I like lavendar chicken. Sauteed with lavendar and thyme; finished with a reduced chicken stock. Yummy
