| | 6 ripe medium bananas I am looking for a recipe other than banana bread. I have 6 medium sized bananas and I am looking for some ideas on what do with them . Any ideas please ?

| | Mary Sue Milliken and Susan Feniger (Two Hot Tamales) came up with this alternative to guacomole, which appeared in the book Yum! Tasty Recipes From Culinary Greats: Spicy Banana Dip
2 tbls vegetable oil
1yellow onion, diced
1 tsp sea salt or to taste
2 tsp grated or minced fresh ginger root (about 1 inch of root)
2 cloves garlic, grated or minced
1 whole serrano chile, grated or minced
2 bananas, mashed with a fork
2 tbls cider vinegar
4 tbls water
3 tbls chopped cilantr
Heat the vegetable oil in a small pot. Add the onion and salt and cook over medium heat until golden brown. Add the grated ginger, garlic, and serrano chili and cook a minute or two to release the aromas. Add the banana, vinegar and water and simmer briefly. Remove from heat and cool to room temperature. Stir in chopped cilantro and serve. |

I will be making the banana ice cream to serve along side my chocolate torte. The chutney and dip I will save for my next patches of ripe bananas. I am always looking for new recipes for ripe bananas as I seem to always have them on the counter.

| | Banana Horseradish Salad
Cut bananas into 1 inch chunks. Toss thru 1 tsp lemon juice. Mix 1 Tbsp Horseradish relish with 1/2 cup sour cream and 1/2 cup single cream, plus a pinch of salt and a few grinds of pepper. Gently mix thru bananas. Chill 1 or 2 hours before serving.
This is an unusual savoury salad, goes well with bbq'd meats.

I will add that to my ripe banana file. It looks like a real new twist on using horseradish. I really enjoy horseradish because of its diuretic properties.

I have decided to go buy some more bananas to try these dishes, the fish dish I will make thursday. I have had it with pompano once but I would like to try the sole with a light cream sauce or mango beurre blanc.

Puree the bananas with a little sugar, add a bit of lemon juice, about the same volume in yogurt, spread at the bottom of a large container (so it freezes fast and without too big ice crystals) and freeze.
Few hours later, take out, mix and serve.
Or if you can't bother waiting, skip the whole freezing part and eat your yogurt banana! |

| | My ex-wife won the blue ribbon at the state fair a couple of times for her banana bread. Man was it good. I don't have a recipe but she said the bananas need to be ripe enough that the skins are just about totally black. |

Take a banana and cut it in half length ways
Take a tortilla wrap and spread peanut butter on it and place the banana on it and add chocolate chips and mini marshmallows.
Wrap it up like a burrito and brush some melted butter on the outside and toss it on the grill until the chocolate and marshmallow melts and nice grill marks on the outside. |

| | Hmmm that Burrito sounds sinfully good!! Reminds me of another (less elaborate) late nite sin:
1) Unpeel banana
2) Spread some Nutella along the banana (alternatively you can use Peanut Butter, but Nutella works better)
3) If available, also spread some sweet vanilla-chestnut cream on the other side of the banana.
4) If available, add some whipped cream on top. |  | |
