| PORK RIBS IN BLACK BEAN SAUCE INGREDIENTS: 2 scallions, chopped 3 tbsp. shredded ginger 2 cloves garlic, crushed 1 tsp. black pepper 2 tbsp. fermented black beans 1/2 tsp. salt 2 tsp. sugar 1 tbsp. Chinese wine or sherry 1 tbsp. black soy sauce 2 tbsp. oil 1 lb. spare ribs 1 tbsp. cornstarch Heat oils and fries scallions, ginger, garlic, fermented black beans. Add ribs and stir-fry for a few minutes more. Add wine, soy sauce, pepper and a little water and simmer for 15 minutes or until tender. Dissolve cornstarch with 2 tbsp. of water and pour it in. Bring to a boil and serve. |
