| | dipping sauce idea for grilled vegetable platter I was wondering what type of dip would go w/ a grilled vegetable platter ? The crowd likes to try new things.Also, I was thinking of pairing the platter w/ crumbled feta or bocconcini.

| | A few ideas in no particular order: - Arabiata
- Thai-style, peanut sate sauce
- Thai-style, sweet hot chile sauce
- Thai-style sri-racha -- You can make an aioli with the popular brand (rooster on the label); but there are better sri-rachas available. Shark brand for instance.
- Vietnamese style, fish sauce with vinegar, sugar and julienne or carrots -- have bowls of HOT water, rice paper wrapper, lettuce, fesh Thai basil, and ,
- Salsa de tomatillas -- Actually, if you've got the Herdez salsa verde in the can available to you, it's awfully hard to beat. Kind of on the hot side, for Americans
- Chinese black vinegar -- Add some ginger, julienne. Some sesame seeds too.
- Chinese red vinegar -- The sweetened, dilute kind. Same with the ginger. Forget the seeds.
- Japanese dumpling sauce (soy sauce, rice vinegar, sesame oil, and Japanese chili pepper (very mild)
- Chinese dumpling sauce -- Same as Japanese, but with chili-oil (spicy) instead of Japanese chili pepper.
- Alternative dumpling sauce -- An excellent variation on the theme. U "lan-yu" (very hot, concentrated chili oil) instead of the also hot chili-oil with ground chilis still in it.
- Chipole aioli
- Remoulade
- Russian dressing -- So old it's new
- Green Goddess dressing -- Ditto. An excellent dressing -- and dip -- which never should have gone away. Let's bring it back!
- Hollandaise (or hollandaise with lime)
- The ever popular honey-mustard vinaigrette
- Pesto -- pine nut or walnut
- Sour ceam with bacon and horseradish
- A spread of goat cheese or cream cheese with garlic and herbs
Etc., etc., etc.,

| | As BDL suggests, any number of salad dressings will work, a chunky bleu cheese is one of my favorites. You did say grilled, maybe a vinegar and mustard based barbecue sauce, or your favorite 'dressed up' catsup for that matter.
The classic hot parmesan, mayo and artichoke.
Roasted garlic hummus style dip.
Marinara. One thing I didn't do this summer was smoke any tomatoes. Smoked tomatoes can produce some interesting sauces.
You might be surprised at how many sauces can benefit from the addition of a bit of anchovy. When well incorporated, no one realizes they are eating anchovies, they just know it tastes better than the usual stuff.
Consider curries.

| | Wow, great responses. I only have one tiny little dipping sauce to offer. Spicy roasted red pepper/feta dip. You can either roast your own red peppers but for convenience I often buy them in a jar. Strain the red peppers and then place them in the food processor along with some chili pepper flakes and zap. Add feta cheese and zap again, while drizzling a little olive oil in to smooth out the consistency. This is great for pita dipping too.
Hummus is great too.
