Default Please help w/ menu!!!!!!!!!!!!!!

I'm doing this as a favor for a friend. I'm appreciateing those of you who have culinary,restaurant and catering experience even more.


The party starts at 7pm. I was thinking 4 appies per person x 140 people.

1)Spanakopita
2)Crudite platter w/ sun dried tomato dip ( not sure how big or quantity I should do)
3)Stuffed mshrooms with caramelized onions and goat cheese or blue cheese
4)wonton cups with a filling I haven't thought of yet.
5)tomato/pesto tartlets
6)grilled veggie platter with bocconcini


homemade pasta enrees/pumpkin,stuffed shells/not sure on the last.

2 salads

1Greek salad
1 Spinach salad w/candied walnuts,dried cranberries and onions w/balsamic vinaigrette

Dessert:

cheesecake brownies,lemon bars,coconut choc chip cookies,

Fruit tray w/ cannoli cream

Someone bring a carrot cake

Questions .....
How much salad do I need?
The spinach salad to me is boring. They are vegetarians so I can't add bacon.
How much dessert to I allow per person?
Can I make the stuffed mushrooms ahead of time?

She is having people passing food.

Unless you wanted to keep that recipe vegan, consider adding cheese? Feta cheese would work well with the spinach, cranberries and candied nuts.

A little more adventurous: maybe some fried shallots? I started adding fried shallots to raw salads after seeing it done in Thai cooking and really enjoy it.

Another idea: a French technique is to "cook" the shallots in vinegar before making the dressing. Maybe you could do that with your onion, rather than adding them raw to the salad. Just marinate them in the vinegar+salt for a few minutes before adding the oil to finish the dressing.

I don't understand, how can a spinach salad with candied walnuts be boring? Candied walnuts are a party onto themselves!! But seriously, I would think about adding some crumbled blue cheese to that.

For the stuffed wantons I would stuff them with a cheese stuffing like this:
ricotta
chopped dried figs
diced tomato
drizzled with honey

this can be made in advance.

Not sure what you mean by 4 appetizers pp. Surely not 4 of each! It appears that almost all of them have cheese. You may want to consider having some without.
So, stationary you have a roasted veg platter and a fresh veg platter? It's pretty unusual to have both.
If you're guests are showing up at 7pm, you figure 45-1hour cocktail hour, then dinner. You've got a substantial dinner so appetizers are just that....guess my point is you don't want to fill them up before the meal, think of the volume of food.

possibly mascerate the red onions in spice vinager, but it reads ok to me.....

Bitesize works. Remember you have have already served a lot of food.

you have 2 green salads, is this on a buffet?

Greek Salad can go all out. The spinach reads ok to me.


How much dessert to I allow per person?
how big are you cutting the bars/cookies, is the carrot cake a sheet & how big is it going to be?
Can I make the stuffed mushrooms ahead of time?
are they hot or cold?
