It is a thicker cheese, able to be diced or crumbled.
I use it on pizza, yum.

Ricotta salata means salted ricotta. It's ricotta that has been salted and aged, less watery, can be roughly grated.
It's used in various dishes among which pasta alla Norma, the sicilian sauce with eggplants, tomatoes and onions, into which you grate the ricotta salata. The consistency is like feta, but is less strong tasting.

There is also a milder hardish version of ricotta, ricotta al forno, which means baked ricotta. It's sort of black outside (because of being baked) and is not watery but is not salted, so it;s a mild flavor.
