Greetings all, In my veg box last week there was a one and half pound beetroot, I love small cooked beets, and dont' mind them grated raw in a salad, but don't fancy borstch (dont know how to spell that) soup, a pickle could be OK, but can I cut the wretched thing up first before cooking and wrap pieces in foil - I admit defeat on this one

Why not wash, dry, then bake in skin first, don some plastic gloves, peel when cool enough, and proceed? Don't trim either end off too short, gives a better result, just trim off when you peel them.

The skin pretty much rubs off by this stage, and it keeps the flavour in.

Many thanks to you D C Sunshine, the problem was the size of the wretched thing, so I cut it into four pieces, wrapped loosely in foil, cooked in the pressure cooker for half an hour on an upturned deep trivet so it didn't get any water on it and it worked out perfectly not too soft. I then proceeded to sweet pickle it. I fancied cubes rather than sliced for a change.
