I am looking for new ideas for making pancakes. I have fallen into a rut and need something new to do. Any ideas?

A LONG time ago, a pancake house in Augusta had ham pancakes with a cheddar sauce, chicken pancakes with milk gravy, tuna pancakes (cannot remember the sauce), and a host of other "dinner choices".

I usually make only sweet pancakes, not savory. I make them 1/2 whole wheat and throw in some walnuts and sometimes some flax seed if I have it.

The savory pancake idea sounds interesting, but not with tuna.

Pancakes with peanut butter and molasses syrup are a variation I like. Then there's crepes filled with cream cheese, served hot with jam or fruit syrup on them.

Here are a few:
  • Dutch babies (kind of like giant pancake popovers) with powdered sugar and lots of lemon
  • Banana Pancakes
  • Chopped nectarines
  • Pancakes with chocolate chips, orange zest and orange extract
  • Cut the sugar in half and substitute 1/4 of the flour for corn flour, add some fresh or canned corn kernels, and some chopped jalapenos
  • Pigs in their blankets
  • Apple cinnamon (apple sauce added to the batter)
  • Buckwheat pancakes (replace 1/4 of the flour with an equal amount of buckwheat flour)
  • Mixed grain -- Mix buckwheat, wholewheat, rolled oats, corn flour, rye, etc., in any proportion you like, and mix it with white flour. You'll want to keep about 50% white flour or the pancakes will be too gritty and heavy.
  • Latkes
  • Pecan or walnut pancakes
  • Bacon-bit pancakes

......yes, speaking of oranges,

Grand Marnier Pancakes with Grand Marnier Ice Cream.....

Grand Marnier on ice....I finsih this with a cup of black tea, 1/2 ounce of Grand Marnier which makes the tea taste like Blueberries.

I will take the "Pancakes" for supper anytime.

Chef BDL, I enjoyed the simplicity of your pancake recipe that you posted (one of everything).

I am especially intrigued by the one that has the corn flour, corn and jalapeños. What would you use as an accompanying sauce or syrup?

Got a craving for pancakes now....

Sweet options
- simply spread with blackberry jam (jelly) and top with heavy cream
- top with rich vanilla icecream and butterscotch sauce
- macerated berry fruits in season, thick dollop of chantilly cream, sprinkle of icing (confectioner's) sugar

Savoury (wot BDL said on adjusting the recipe)
- make a stack of small ones, layer with bolognaise sauce, shredded tasty cheddar, topped with shavings of parmesan
- make a giant one (12" pan), fill with chicken mornay, roll, top with cheese, under griller(broiler) till golden and bubbly
- creamy, peppery mushroom sauce (in stack again) topped with rashers of crispy fried bacon
- poached egg and hollandaise sauce
- Huevos rancheros style, just substitute tortilla with good sized pancake

How about a tequila-butter sauce? Kind of like butterscotch. (I'm not going to try it but it would be interesting if someone else did and told me how it came out).
