Default Anyone ever heard of Purple Yam Cake? It's a specialty for Philippino and Thai Bakers

Any recipes? Where is a good place to look?

i havent a recipe, however i have seen purple/blue yams and they do exist - somewhat like a purple congo potato.

I made a roulade once using purple yam powder I got at a Phillipine market. Looked really cool, tasted great, didnt sell

Yam Cake (Wu Tow Ko)

Ingredients:
250g yam — diced
1 cup water

(B)
Mix together then sieve
125g rice flour
20g tapioca flour
1 cup water
1/4 tsp alkaline water

For seasoning:
1 tbsp Maggi chicken stock granules
Salt to taste
Dash of pepper
1/4 tsp sugar

For garnishing:
50g dried prawns — soaked and chopped coarsely
4 shallots — sliced
Chop 2 stalks spring onions
2 sprigs Chinese parsley and
2 red chillies

For chilli sauce:
Mix together till sugar dissolves
10 red chillies — pounded
2 tbsp sugar
2 tbsp salt
2 tbsp lemon juice

Method:
HEAT 4 tbsp oil and saute shallots till crisp. Remove and leave the oil in the wok. Add dried prawns and saute till fragrant. Remove and set aside for garnishing.

Add 2 tbsp oil to the remaining oil in the wok, add yam and stir fry well. Mix in water and bring to a boil. Add in (B) and seasoning and cook till batter is fairly thick. Pour thick batter into a well-greased 25cm round tray.

Steam till kuih is set and cooked through. Leave aside to cool, then garnish and
cut into diamond shapes.

Serve Yam Cake with chilli sauce.

This is more what I had in mind. Well, sort of. Truly I want a sponge cake recipe that incorporates the purple yam. I probably will have to come up with it myself, seeing as Goldilocks and Red Ribbon won't give me their recipe! HA!

Ingredients:

1 cup butter
2 cups sugar
1-1/2 cups mashed cooked purple yam
4 eggs
3 cups flour
1/4 teaspoon soda
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 cup chopped pecans
1/2 cup flaked coconut

Instructions:

Cream butter and sugar; add purple yam and beat until light and fluffy.
Add eggs one at a time beating well after each.

Combine dry ingredients and stir into creamed mixture; add vanilla,
nuts and coconut.

Specifics always help....

Here is a recipe for Filipino Ube Cake (purple yam cake)

Steamed Ube Cake

2 cups purple yam, washed, peeled and cubed
2 cups sweet rice flour
1-1/2 cups water
1 cup sugar
1-1/4 cup coconut milk
4 tablespoons baking powder
1/2 cup grated coconut

Cover yams with water and boil until tender or soft. Drain and put through a ricer. Mash until smooth.

Mix flour and water in a bowl to form a thick batter. Add sugar and mashed yams. Blend well. Strain to remove lumps. Add coconut milk and the baking powder and mix well.

Pour mixture into greased muffin pans to 2/3 full and steam over boiling water about 30 minutes, or until a toothpick inserted comes out clean. Serve hot, warm or at room temperature, topped with coconut. Makes 3 dozen cakes.

Oh yes, I was curious if you created the recipe yourself in order to recreate the cake. Keep in mind the traditional ingredients the Filipinos and other asians would use. Yours appears to be somewhat "Americanized" but it was enough of a clue to help me know what you were wanting.

I got it from a Filipino link. Yup, my living in Thailand for 4 years gave me experience in the MAJOR differences of Asian v. American tastes/preferences. what a fun idea for a dessert menu item. we use purple potatoes on the reg menu, why not dessert? how about using them for a tart crust? do you think the colour would carry? muffins would be a lovely thing, imagine purple muffins, blue corn muffins, red yam muffins, a rainbow of muffins.
i need some more coffee!
