| i need to know from as many as possible the best way to get my hoods cleaned and equipment what chemicals can i use |

| To clean your hood filters, I have set up a three compartment sink with a solution of degreasers and water and soaked , scrubbed and rinsed. Degreaser sprayed on the hoods themselves keep the grease buildup down to a minimum. A regular cleaning schedule is what you need to keep up on it. Its a good job to have done on Sunday night or whenever your slowest night of the week is. |

| When you say cleaning your hoods, do you mean just the filters and the part you see or do you mean the whole thing? If you mean the whole thing, including shaft, fans, etc. you need to hire professionals. As for the filters, I used to work with a wood burning grill that created lots of soot so I would have to clean them everyday. When you do it this often high-powered hot water did the trick. If only cleaning them once a week, we would soak them overnight in the sink with degreaser (Greasecutter from Ecolab) then the dishwashers, in the morning would wash them first thing in the dishwasher. Make sure they clean the dishmachine before they do any other dishes though. |

| Definetly if you are talking about the insides of the hood systems. But if its just the filters or the outside of the hoods, then use the methods stated above. I have had chefs use it as a punishment job for being late or screwing up something really bad. |
