Default The Next Best Thing to Duck Fat

Guess what I'm cooking my eggs in this morning? Because we have access to food ingredients on both ends of the spectrum, I've managed to "procure" as a sample, some 1% moisture butter. Yumm...

So what is it? butter with nearly no water? Hmm, sounds like you got yourself an almost pure lump of butter fat, and that has to be a good thing....

The next best thing to duck fat is.....SMOKED duck fat. Try this. Confit some wild mushrooms in hazelnut oil jazzed up with some smoked duck fat, thyme and a few sprigs of rosemary. Use these mushrooms to make a smoked duck, mushroom, hazelnut risotto. mighty tasty. ps. I also like nut oils.
