Yawn cooking eggs

It is said that a chef's hat or toque has 101 pleats in it, representing the number of ways the wearer can cook eggs. Are there 101 different ways to cook eggs or does it mean 101 recipes for eggs ?. If there is that many ways to cook eggs let's try and list them.

Egg yolks with sugar as dessert. Sounded icky to me but I was served this in Italy last year as part of a Renaissance tasting meal. It was really great as long as you don't think about cholesterol.
An Italian friend said his great grandmother used to fix this but he didn't know the recipe or technique.
Anybody know how to make this?

Are you refering to a "Zabaglione" Where you take egg yolks and whip them over a double boiler with some sweet marsala wine and sugar until they thicken into a sauce and you pour over fruits..the Italian form of the "French-Style Sabayon(with white wine instead of marsala) and vice versa. How did it look/ what was the texture? What was it seved with? Good discussion!

Love that stuff. 4 egg yolks, 1/4 c. sugar and 1/4 c. Marsala. Whisk those puppies till foamy and then begin adding the marsala, drop by drop. When the soft creamy consistency holds its shape, plop on some berries. I use a copper bowl on my double boiler cuz that's how Vic taugh me. Very yummy! (Some call it zabaione too.)

If you have a copy of the On Cooking (canadian edition), there is a recipe for a Mission Hill Ice Wine Sabayon. Mission Hill is made in the beautiful Okanagan Valley, in BC.

seprate the egg yolks from the white ones add milk, condensed and then, put a little lemon scent and 1/4 water whoala! Leche Flan
P.S. dont forget to make Arnival.. 1 cup Sugar then 1 cup water until brown.
