Question Just for a definition!

Hello,
I would like to know what's the definition of acidifier, which is an additive used in pastry? I think there's another word to say it : acidulant!

To acidulate something is to add an acid. Acids come in many forms:

* Vinegar
* Wine
* Vitamin C (which many people add to bread)
* Citrus juice like lemon

Acidulating water stops certain foods from turning brown - like artichokes. To rub a lemon on an artichoke or placing it in water treated with lemon juice will prevent it from turning brown.
