| Arctic Char is a fish related to salmon and trout. Size wise they are bigger than most trout and smaller than salmon. On average they weigh a couple of pounds. The flesh is paler than salmon, almost a peach color sometimes, with just a slightly less fat content. The text is similar to salmon though it is more finely grained. I like it because I often serve it skin on, and I love crispy fish skin. |
