| why when cooking ground beef that has salt as an ingredient made a day ahead such as meatballs hamburger steak meatballs - my ground beef stays bright pink in the middle??? ------------------ |

| More info needed. do you buy the ground beef from elsewhere or do you make it yourself? I suspect that you buy the beef and it has sodium nitrite added as a preservative this will cause the pink colour after cooking peter |

| Sodium Nitrate, commonly called salt peter, is often used as a preservative. It is what causes corned beef to become pink. But I doubt that it is in your ground beef. Ask your butcher. It is more likely that you are not cooking your meat long enough. |
