| I have lots of fresh mint and wanted to make mint oil that will keep for a long time. Its for deserts, I imagine though it could be used for other things as well.

| Pinarello, Mint oil is easy to make,just bruse the leaves, make sure they are very clean and dry and use a neutrial oil. However, to your statement of holding on to it for a long time, I recommend against this because it really in good for a couple of weeks. You could make a mint vodka instead...crush the leaves and cover with vodka, wait a few weeks (the longer the better) then you will have a "mock" mint exstract
