when i was young before i become a chef (as if i had a choice) i got brought up on pigs tales rice and black eye peas. you may think its pesant food but i,m thinking of introducing a jamacan theme week any ideas of what i can do with the tale of a big fat pig. |

| Sounds to me like you already know what to do with them. Go for it! We made a Jamaican soup/stew with pig tails once on a slow night at work, just for the cooks & dishwashers. It was amazing... |
