What are your favorite spices to use?

I use basil,oregano, rosemary, thyme and marjoram the most. My favorite herb is Tarragon. I love the anise flavor but most importantly, I love the lushness with which it presents itself onto your palate. Its flavor is mouth-filling and deeply satisfying to me. Does that make sense?

hmnnn I would have to say my faveorite spices are dill (for seafood and spinach dishes especially), oregano (works well with many things other than pizza), cumin (try it with vegetables as well as tex-mex dishes), cinnamon (mnnnnnn brings pastry to mind), mustard (I have found it to be one of the most versatile spices when working with meats.. from lamb and beef to poultry to pork.. I like it with venison especially when combined with crushed juniper berries, garlic and cracked black pepper as a rub). That names a few but spices are definitely one of the keys to cooking.

herbs. tarragon, basil, dillweed, oregano, lavender, thyme

spices, cinnamon, cumin, chilis, peppers, salts, mustards

these are what I use weekly.

Just a quick Clarification.
The leaves fresh or dried are Herbs.
The seeds,pods,roots,bark etc are the spice.
My favorite herb is Rosemary.
as far as spices, I haven't met one I didn't like.

Sage and garlic!!! I love cinnamon with organo and garlic in Greek food. I'm learning to like cilentro- seems you love it or hate it. Fresh nutmeg is a must in my kitchen. I love ginger so much I used to make tea with it, until my stomach problems got too troublesome.

I work in a very upscale rest.
We use Saffron for rice and Truffles
And Last night I made Forbidden Rice it's purple. The say in the old days that only the Empureor was aloud to eat it.

I also love cinnamon.

And herbs? I love the flavor of mint, but refuse to use it as a garnish.
