I find it interesting that you closed down the Bobby Flay can't really cook thread in this forum of all places.
I thought this was the place people discussed things like that.
18 posts on that thread....and somehow you arbitrarily close it down.

Why don't you lay it down in crystal clear format what YOU feel is acceptable discussion fodder, and please expand greatly on what vocabulary can and can't be used.

What's up with you and 1984?

The forum users should be deciding who and what to talk about, not you

I strongly disagree. The forum, its operation and content belong to Nicko. If there's a liability from the speech here, he's the one to bear the legal brunt of it. That's one reason he's touchy about copied content here in contrast to linked content.

Similarly, free speech exists in public places. As all this belongs to Nicko, it's a private space. When we signed up to participate here we agreed to play by Nicko's rules.

I've complained to him about some operational choices I've disagreed with but I recognize his authority to establish rules and decide what's acceptable and what's not. I can complain, and so can you but neither of us can dictate what goes on here. That's his right and I think he handles it pretty well.

I myself was a little surprised by the closing, but I stand by Nickos decision and reasons behind it. Nicko doesn't need any defending, but Cat Man you are on the new side so you don't know what has been happening over the years. Perhaps you shouldn't be so quick to pounce (hey, now that was funny!.....) But seriously, Nicko is not the heavy hand you make him out to be. Lighten up a little.

Cat Man,

First off I believe your apology was commendable. I know you didn't start the post and for all it's worth, having a post locked is something I haven't seen yet. But Nicko had his reasons. This isn't meant to sound like I'm squaring off with you. I just wanted to give you a professional Chef's view of the topic (or at least a personal one.)

For the most part being a Chef is difficult at best. In most places around the industry, there is always someone (from the person that is supposed to be closest to you like your Sous Chef all the way down to the w/w you just chewed out) that wants to plant a knife square in your back. This goes on everyday in and out of the restaurant.

When topics like the Bobby Flay one appear, it takes it from the local level and opens it to the world. Heck I even cringe when I see the ones about RR and......Now I'm dang sure Chef Flay visits here every now and then or at least I'd like to think he would. I for one would love the opportunity to sit and talk to him in a setting like this. So, If you were Chef Flay and saw posts like this, how often would you feel welcomed?

I'm not sure what you do for a living but for conversation sake let's say you make widgets and also have a show to promote those. There happens to be a widget forum and someone starts one of many topics on how horrible of a job you do at yours. Now this person has absolutly no professional background in widgets (or atleast doesn't disclose they do) yet for what ever reason, they feel so strongly that you are so horrible at your job they have to announce it to the whole world. Now, what is your opinion of that person, the site and the people that contribute to and run that site.

There used to be an unwritten rule among Chefs that you wouldn't bash another for your's or any one elses gains or entertainment. I understand you are not a professional Chef but this holds true of the forum you participate in. Ribbing is one thing but bashing is another. I'm not exactly sure what the powers that be want this forum to portray. Yet since I am of the same training and background as many of them here I can only perceive that the forum is here to help educate, entertain, promote, inform and support those interested in the Culinary Arts and food in general. These are the same things that most of the folks are doing when they have either a TV show or run a restaurant.

I can't remember who said it already but these guys on FN (The FN originals and this includes Bobby Flay) have been doing this for a long time and also have successful restaurants. With that said, a name can only carry you so far. Eventually you're gonna have to posess the talent of cooking or Managment ability to back it up. Whether these guy's actually do all the cooking or hire someone to do it for them it's being done to thier specifications and standards. I can't always agree with what or how they do things. But as long as it doesn't promote anarchy or is subversive it's not our place to openly berate or belittle them because they have become and are capitalizing on their success.

I've wanted to say this for months. Now it's off my chest.

Hey guys please don't take this the wrong way at all it is not meant to be "big brotherishh". It is more about the spirit of ChefTalk and what this community is about. That may sound lofty but I really mean it when I say that those kinds of threads are just not what ChefTalk is about. From the very start 8 or 9 years I think the members wanted ChefTalk to be a safe place where people could come and discuss, and not worry about getting flamed or made to feel to stupid. What is ChefTalk? It is about is helping others and learning from each other and growing together.

We have gone through some very tough times here and have all learned a lot about on line community dynamics. Clearly we (especially me) have made some poor decisions a long the way but that is to be expected. As much as I tried to find a manual at the time I started ChefTalk there simply was none for running an online community of hundreds of community members. We have grown from those mistakes and I think ChefTalk is better than ever. It is exciting to see all of the new members bringing new perspectives to the community and the new friendships being formed. One of the greatest things I personally have received from ChefTalk is the close friendships I have made through this community.

Cat Man you are right when you say that this forum "The Late Night Cafe" is supposed to be a forum where you can discuss off topics items. I suppose that we should probably put a disclaimer because certain topics really don’t build up the community. What are those topics you might ask? Well in general we discourage any topics about religion, politics and plain old bashing another person. For obvious reasons the religious and political topics just get very heated and people always walk away from them being hurt and usually leave the community. Also ChefTalk is a food and cooking forum not a religious or political forum. There are plenty of political and religious communities on the web and that is where those topics should be discussed. As for bashing threads they just don’t really bring anything good to the community since there is nothing really constructive about them.

My last thought that I wanted to share is that I really hope everyone understands that these forums belong to the community not me. About the only thing I can really claim is that I had the idea and set up the software. It is the great people who come here regularly that make this the community it is. Think of me as the man behind the scenes keeping things running smoothly answering emails, helping new users, installing upgrades etc. This community is way too big for me to run on my own and I believe it takes everyone to make this a great place.

Hope that my comments have helped you understand where I was coming from.

P. S. sorry it has taken me a while to get back to this thread I am currently at a week long conference in Orlando Florida.

Nicko, you're a mensch (fine person).

I just hope more members get a chance to meet you (and each other!) in person. I've been extremely fortunate to have been able to meet just about two dozen CT members in person. At the risk of sounding schmaltzy, I can say all of them are top shelf people and care a great deal about participating here in a way that enhances everyone's experience here. Nicko and the moderators work hard to keep things running smoothly but really it's EVERYONE, including each member, who are the reasons this is a great community.
