I wrote Kitchen Confidential with cooks, chefs--and yes--even waitrons in mind, and it's enormously gratifying that my comrades in the trenches seem to be enjoying it. I've been travelling all over--and it may pleasantly surprise you that cooks EVERYWHERE--even in Bristol, Manchester, Glasgow, London, Edinburgh etc--as well as all over the US, seem to be the same kind of piratical maniacs. Those of us who love this Life of Ours are in love with the adrenalin it seems; the insane rushes, the relentless pressure, the hours and the people. Cooks Rule! |
