Default Our most memorable meal of 2006

In a year filled with memorable meals, the one that stands out to us as we reflect on 2006 is not our visit to a four-star temple of haute cuisine, but to a fledgling restaurant opened by two young chefs with a dream in Bellingham, Washington, which is located between Seattle and Vancouver.

At Nimbus in Bellingham, we tasted the future of food. And it was delicious.

Two talented young chefs,, Josh Silverman and James Winberg are taking this college town (and lucky visitors) by storm in their restaurant that sits atop the Bellingham Towers on its 14th floor, offering an impressive view of the city -- and cuisine to match.

We were impressed that their innovation was matched by a maturity of judgment that belied their years, given that each dish exhibited both balance and restraint. Especially impressive was their creative incorporation of beautifully-matched beverages into the presentation of several of the dishes.

Our dish of Delicata "Capellini" with Sage Brown Butter and Housemade Tofu Sausage served with Pumpkin Ale was one of the best food and beer pairings of our lives.

OK, this is really weird. We're planning on moving to the Bellingham area by this Spring or Summer. It's great to hear about this new restaurant! Thanks.
