How did you get started in Culinary art. Who was your influence in the culinary field.

I went to Paris as a young man and fell in love with the food. When figuring out whom to study with, I discovered (through the people at Chez Paniss) Richard Olney's Simple French Food which continues to be an inspiration. I of course eventually studied in France.
