Default Favorite Chile

Rick, inquiring minds want to know. What's your favorite chile, or your top five?

AND...

For kicks, how hot is hot for you?

how hot is more HOT

and how hot is HOT?

Default Favorite Chile

C'mon on...why not ask me what my favorite dish is, favorite kid, etc! They are all so flavorful, and used in so many dishes, I couldn't choose. I do love roasting chiles though...poblanos especially--the work horse of the Mexican kitchen. When roasted, these make any dish much more flavorful. Try it in guacamole. As far as heat...I'm not much into that--more flavor than anything.
