Default Pepper and Chiles?

Rick,

Coming from a traditional cooking background, we were always taught to salt and pepper everything. (well most everything) When using chiles, do you think it is redundant to use pepper?

I find that I don’t use much pepper. You are right, the flavor of the chiles really comes through in cooking and usually needs to be balanced by lime and I always season with salt.
