I look around and it seems as though all the well known chefs are expanding outside their home territory. Do you have any future plans on expanding your restaurants to other cities? Or are you content with what you're doing in Chicago? I know a few cities here in the Midwest and elsewhere that could certainly use some good Mexican restaurants.
As you can imagine, I have been asked about this many times. I love my restaurants in Chicago and with all of my other projects I have a lot going on. Running a restaurant in another city would be pretty demanding as I am a “hands-on” kind of guy. I don’t think I could just open one and forget about it!
