| Chef, I'd be curious to know what was the most challenging dish you ever tackled? For instance, in one of your books you have a mole sauce that you say is simplified. However it sure looks challenging to me, and I have yet to attempt it! |

| The next one I will try! They all require some amount of thought and care. I agree, the moles tend to have the most ingredients and are really used for celebration dishes—not made everyday. They are special recipes and yes, challenging, but not in the sense of dread---the spirit I have for approaching a dish does not matter on the time/long ingredient list, etc….Each one has its own set of challenges. I have now written 6 cookbooks, so I face recipe writing with gusto! |
