Default My own bread flour - how?


I want to make at home a bread flour.
I have gluten . How many grams should I add to my 1 kilo cake flour ?

Hi Amira,

I would stay away from baking breead with cake flour. They are made from different kinds of wheat an cake flour often has corn starch added. You would do better by adding Vital Wheat Gluten to all purpose flour. Try adding 1 TBS/cup of AP flour.

TNX.
I meant, of course, all purpos flour.
I usually add 30 grams per 1 kilo.

That's about right. Does it work at that level? I might increase it to 40 grams.
