Default pie crust??

this may sound pretty elementary, but i need help with this please!
There is a ghaham cracker crust for pies, and another type of crust used for quiches and things like that.. what is it called and how can i make it?

Sweet Paste or Dough
600g shortening
350g sugar
15g salt
5g vanilla
2 eggs
140ml milk
1000g pastry flour

Cream sugar, salt, vanilla, and shortening.
Add eggs 1 by 1.
Add milk and incorporate.
Sift pastry flour and add, mix to incorporate.
Dust with flour and roll into a long roll, wrap and chill for at least 30mins.

This will make quite a bit so adjust accordingly. You can also roll this out into a large sheet say 1/4 inch thick, cut with cookie cutters, bake in 350 for 10-15min, and you get nice cookies for christmas decorated cookies. Add icing, red/green sugar, stuff like that.

Are you looking for basic pastry dough?

1 1/3 c. AP flour
pinch salt
1/4 c. unsalted butter, cold
1/3 c. shortening, cold
scant 4 T. ice water

(scaled down from larger recipe using weight)

You can find non-dairy margarine, too. Or use 2/3 c. shortening and omit butter, but you lose flavor. If using margarine, omit salt.
