Default Rum poached banana and cashew ganache idea

James petersons poached banana recipe:

3 large bananas
.5 cup (100g) sugar
3 cup water
.25 to .5 good Rum to taste

cut bananas into quarters and simmer for 4 min. remove to a strainer, reduce liquid and add rum to taste, replace bananas.

My idea:
Lindt chocolate
whipping cream
cashew butter

So i poached a banana tonight and it was great! Ive never had a banana like it before. the syrup imparts a sweetness that frying has not (at least for me). I have the idea to use some extra xmas chocolate for a dip. Lindt is so wonderful tasting. I want to add just a touch of nut butter to the ganache.

What would be your choice between cashew, hazelnut and almond butter.

I would like to serve the bananas on something. Possibly a sugared phyllo sheet or a 1 cm thin brownie or torte. suggestions...

Mmm... sounds great. I love cashew butter. It has such a subtle and distinctive flavor. What a fine accompaniment to a dish like this. A thin, crispy sheet of phyllo would add a delicate crunch. Consider balancing it on top of the banana (instead of underneath), if there's any chance of it getting soggy.
