Default Fudge Icing

For many years, I have chosen this recipe to prepare Fudge Icing for tall, tender-crumbed cocoa layer cakes. It provides a luscious thick coating….

4 ounces unsweetened chocolate, coarsely chopped
2 Tbsp solid vegetable shortening
4 cups confectioners’ sugar
¼ tsp fine salt
4 fl. oz. plus 1 fl. oz. homogenized milk
1 tsp vanilla extract

In bowl set over pan of barely simmering water, combine chocolate and shortening. Stir until mixture is smooth. Immediately remove from heat.

Combine sugar, salt, ½ cup milk, and vanilla. Stir until smooth.

Scrape melted chocolate into sugar mixture and beat with a spoon until well blended. Let the icing stand for 1 minute; it will thicken considerably. Beat in the remaining milk until ideally smooth.

To give the icing a shiny glaze, dip the palette knife in warm water and lightly swirl a decorative pattern over the cake.
