Flambe Dude, if you can find little phyllo "nests"/shells in the freezer at the store, they can help you make knock-out bites without much trouble. Here are some things you can put in them:

Chunky salsa- drain out most of the liquid. Put a tsp. or so in the shell. Top with sour cream and a bit of chopped cilentro

Chop some artichokes really well (drained artichoke heart quarters from a can). Mix the chopped artichokes with 1/2 cup REAL mayonnaise (not MiracleWhip or other salad dressings), 1/4 cup shredded parmesan cheese, 1/4 cup shredded monterey jack cheese and 1/4 cup shredded cheddar. You can throw in a mashed-up garlic clove and a little finely-chopped mild green chilis, too. Mix it up well. Put a small spoonful in each shell. Bake 8 minutes at 400 degrees. YUM. You can use this mixture as a dip. Put it all into a nice glass pie plate or other oven-proof bowl. Bake at 400 until the whole dish is bubbly and hot in the middle (about 20-25 mintues, I'd think.) Serve with taco chips. You can mix up the filling the day before if you want!

For a sweet bite, spoon in some pecan pie filling, lemon filling or other favorite filling into the shells. Bake as above.

Are these too complicated? I don't know what skills you have. I'm impressed that you want to do more than just put out chips and dip!

great attitude. I'd start with a cookbook or 2 and work your way through them. Once you have the basic techniques(may i suggest Jacques Pepin, La Methode and La Technique) down, it's time to have fun.

The local library is a great asset.

Good luck, danny

Simple recipies are good too like brownies, cookies, etc. They seem simple but you can always find ways to get creative with them.
