Mad Chilled cheesecake

Why all chilled cheesecake receipes call for lemon juice? I'm creating Macha(green tea powder) cheesecake for my client and I don't think it is necessary to use lemon juice. Is there any significant reason of the use of lemon juice? Please help me.

First I'll throw in my 2 cents: the lemon juice helps coagulate the dairy products, to firm them up. Also, lemon brightens other flavors and cuts the impression of richness.

Now: I'm moving this to Baking Questions, where people can give you much better answers.
