| I want to make a dessert risotto, but I don't want it to turn out with a plain old rice pudding flavor. I'd like to try a pumpkin flavored one, but I'm not sure about the liquid. I know apple juice may work, but what about something with a higher fat content like soymilk? Also, it is essential that I toast the rice, correct? Would Muscat be good in this? Any ideas would be great. Thanks. |

| I would use a late harvest riesling or semillion. Muscat may be a bit too sweet.

| I've not tried it yet, but I'm going to give this recipe a shot... http://italianfood.about.com/od/vege.../r/blr0088.htm I know it's savory, not sweet, but thought you might like to see it.
