need a short crust and sweet pastry recipe?????

hey guys

recently in my last job we had a fire and all my recipes were destroyed
i am need of a short crust pasty recipe and a sweet pastry recipe ...
...can anyone help

Sweet:

6# butter
3# 12 oz sugar
12 eggs
7# 8 oz ap flour
vanilla
salt

Short (pie):

4# 11 oz ap flour
4T salt
3# 15 oz butter
2 c cold water
