Clown Spring Desserts

What's Cooking?
It's time for the change over from pears and apples and citrus to berries and passion fruit and rhubarb...........
We are starting :
Key Lime Cheese Cakes
Raspberry Frangipans
S'mores

can't wait for stawberry apricot pie!

Last night I saw a pineapple vanilla bean confite
looked like heaven!

Any new desserts to report?
Any forcasts for the summer, what's hot and what's cold?

and i just cant wait to get our edible flowers in, they add so much color to our brunch line!

its a heavy almond pound cake with fresh raspberries baked right in!

Our new spring dessert menu:

-Soft Pavlova nests with a vanilla bean creme fraiche, fresh berries and cassis coulis
-grand marnier creme brulee with candied orange peel/cinnamon almond biscotti
-banana croissant/brioche bread pudding (can't remember sauce/ice cream)
-chocolate shortbread crust tart with peanut butter, ganache filling
-Lime curd tarts with pistachio crust and meringue
-peach/blackberry cobbler with candied ginger/cadamom strussel (so good)

and of course we need to keep the ever so popular chocolate "fondant" cake. (lava cake basically).
