| Hi, I am putting together a Peruvian dinner for a group. So far, everything is very authentic. Apps: Grilled 1/2 " thick rounds Provolone with crusty bread, and spicey, lime marinated chicken livers on skewers Fish course: Cheviche Next: Causa (a stacked potato, tuna, olive, and egg, cold dish), and a small corn and quinuoa timbale...very small portions of both...sort of an Amuse Bush Entree: Duck hind quarter confit with Cilantro infused rice (great color) Salad: Mixed greens with a Passion Fruit viniegrette Desert: individual tarts with rich dark Peruvian coffee Question: Have any ideas for the tarts? Peru is good for chocolate, tropical fruits, corn, quinoua, melons, nuts (especially corn nuts), fish, seafood, guinnea pigs, and....oh, Dulce de Leches, too. Hmm, maybe I'm finding my own answer...How decadent would a flan, topped with a layer of Dulce de Leche, drizzled with chocolate? Dulce de Leche is milk caramel. | I think that if you pair the dulce de leche with the coffee, it'll add an unexpected twist, and won't be as sweet as it'd be with chocolate. If you do use choc., make it a super dark variety, and consider using a neutral crust, like a pie crust or something with cornmeal. Good luck. Sounds like a fun project.

| Thanks, When you say the coffee will give it a difernt twist...are you talking about drinking the coffee or incorporating it in the recipe? I was thinking of drinking it. L |

| my baker is from Peru and his family sent me a cake, it was a bit crunchy with honey and candy all around. I ate it like it was manna from heaven. The candy looked like confetti! maybe he will share some secrets with me! (and i can pass them on to you) ![]()
