| OK everyone that helped me with that 4th of July bash give me some tips here. The food will be served inside in an air conditioned room this is a Labor party but I really do not know what to include in it. Any help appreciated. Be feeding about 120 people. Would like to limit the dessert selection to just 3 items if possible. Thanks Rook... |

| For the pineapple cake I use a white vanilla bean sponge cake. add crushed pinapple to my vanilla bean butter cream wash the cake with simple syrup and coconut milk ice with butter cream and cover with sweet shredded coconut the milk chocolate mousse is a simple milk chocolate gananch with carnation malted milk powder. soften and fold equal parts ganach and soft whipped heavy cream. You can make fresh marshmallows and cut into squares or use jet puffs. ![]()

Go for easy...it's summer! Fruit, berries, in tarts, or shells, with frangipanie (sp) cream Keep it simple, and make way ahead... L Last edited by lyneotto : 08-10-2006 at 05:17 PM. |

| Margarita pie: Take any key lime pie recipe. change the crust to ground salted pretzels and butter. add triple sec and taquilla and there you go! For best results use the recipe off the Nelly and Joes key lime juice bottle. |

| about the jello - it's all fake - artificial color, artificial FLAVOR! - do you know it's just as easy to make a real gelatin with real fruitjuice as it is to make jello? If you like that sort of thing (transparent jiggly colorful fruity deserts that practically have no substance) then do it real! You need to add sugar, lemon juice, and fruitjuice, a bit of water to dissolve the gelatin in, and heat. I can get the proportions if you want, but please don't use jello. Otherwise - desert possibilities are endless. I would like a bavarian cream, vanilla, chocolate and possibly there are raspberries around at that time? It's creamy but light (uses that gelatin!) and if made well, out of this world. You could do three different ones, to accommodate different tastes. What about a chocolate sponge roll with coffee buttercream made with egg whites? Or that wonderful light desert the pavlova - crispy chewy meringue base, whipped cream with raspberries, strawberries (no, not in season), peaches? |
