English Muffins - HELP I've lived in italy for over 30 years and while i make practically everything i really miss from scratch, i have trouble with english muffins. (I like the big-holed chewy Thomas' brand of english muffins).
I've made english muffins many times but there are two problems
1. I do NOT like to stand around hovering watching to see that they don't burn - i always get distracted and they always burn.
2. my heavy cast iron griddle has gotten ruined, i think because the space between the muffins gets very hot, and you're not supposed to heat a pan with nothing in it. Maybe that's not the reason it got ruined, but since i hate standing around doing nothing but watching, let's throw that one in too.
I'm sure that at the thomas' bakeries, for instance, they don't cook them individually in frying pans! There must be a method where you cook them between metal sheets? or on baking sheets, maybe very heavy ones? Has anyone made them in the oven?
I've tried english muffin loaf recipes, but it's just not the same thing.
