Default English Muffins - HELP

I've lived in italy for over 30 years and while i make practically everything i really miss from scratch, i have trouble with english muffins. (I like the big-holed chewy Thomas' brand of english muffins).
I've made english muffins many times but there are two problems
1. I do NOT like to stand around hovering watching to see that they don't burn - i always get distracted and they always burn.
2. my heavy cast iron griddle has gotten ruined, i think because the space between the muffins gets very hot, and you're not supposed to heat a pan with nothing in it. Maybe that's not the reason it got ruined, but since i hate standing around doing nothing but watching, let's throw that one in too.
I'm sure that at the thomas' bakeries, for instance, they don't cook them individually in frying pans! There must be a method where you cook them between metal sheets? or on baking sheets, maybe very heavy ones? Has anyone made them in the oven?
I've tried english muffin loaf recipes, but it's just not the same thing.

thanks.
Unfortunately i can't seem to get onto the first site, and the second one doesn;t tell how to do it without a frying pan. I'm looking for a way that doesn't require me to stand there, spatula in hand, waiting four minutes and hoping they don;t burn, which they always have when i've made them that way.

There is actually a english muffin pan, it resembles a hamburger pan.
Are you using a sour dough?

No i didn;t use sourdough. Never had the patience to make it, and here you can't buy it made. But the recipe wasn;t bad that i used, it was the frying pan. However, if there is an english muffin pan, is it a very heavy pan? Does it make the muffins come out with that sort of crust like when cooked on a griddle?

As I recall, the last time I made English muffuns (and it's been some time) I baked them in the oven. If I remeber tonight I will dig out the recipe and post it tomorrow.
