Default Sugar with Notter

Just got home from 6 days in Chef Notter's two sugar classes. I can't tell you how wonderfully grueling those 6 days were. He filled every minute of every day with more information than we could ever absorb. One day we happened to complete the days schedule 5 minutes early and instead of sending us on our weary way, he threw in another nugget of info. I'm usually not so gushy about classes because I almost never find a teacher so committed to passing on his craft but, he is truly an artist and an exacting teacher. I was concerned that I was spending too much what with the cost of the class, the airfare, hotel, etc. but I would do it again in a heartbeat.
