| Can you sub Unbleached for Bleached flour or is there a different chemical make up that will completely throw recipe?! |

| You can use bleached and unbleached flour interchangeable. The only difference that I am aware of is that bleached flour is whiter than unbleached flour and (I am told) has a few less vitamins. But I don't worry about getting my vitamins from the flour I use. |

| Also it depends if the flour is bromated. If the flour is bromated it has added leavening so you have to consider that. You can look on the ingredients for potassium or sodium bromate |
