| I bake two simnel cakes per year - one for what we in the UK call 'Mothering Sunday' (NOT the USA's 'Mother's Day') and one for Easter Sunday. My recipe slightly browns the simnel 'balls' of marzipan on the cake. |

| gahtan, Your cake looks great! Are you using a formula with or without yeast? I use one without. I also slice mine in half and soak both top and bottom in a fresh blood orange syrup and put a layer of the marzipan in the center which kind of disappears if the cake sits. I also put a little square of soaked cake inside the fondant deciples on top. I always make 12 and eat Judas You are quite accomplished. Thank you for sharring your pics., |

| I was going to toast the balls on the top but thought well does it really matter, now I wish I had. No this is not a yeasted cake, do you have a recipe for a yeasted one..... I agree mothers day in US is entirely different to UK Mothering Sunday. I 'm a Londoner so I know what you mean.. :-))) I put half the cake batter into the pan then a layer of almond paste then to rest of the batter. That's a good idea about making the twelve disciples and then eating Judas.
