| Hi, If you mean the chewy type (not meringue) here is a recipe: Sugar 1# 8oz Macaroon coconut 1# 8oz (you can buy it bulk @ winco) corn syrup 3oz Vanilla Extract 2 tsp Pastry flour 1.5 oz Salt 3/4 tsp Egg Whites 11oz Blend everything together, put in stainless steel bowl over hot water bath, stirring constantly until mixture reaches 120 degree's. Use a pastry bag to pipe onto parchment (or silpat) lined baking sheet, make cookies aprox. 1inch across. Bake at 375 degrees. Happy Baking!! Joan |

| Here's an easy one from Ina Garten: http://www.foodnetwork.com/food/reci...ml?rsrc=search I saw her make these for an episode I saw recently. These sound so much better than the Manischewitz canned ones fro Passover that just might make a batch! Well.... after checking the label on the milk can first. ![]()

| Ok this is so easy you may think it wont be good: 1# coconut 10 oz sugar 5 oz eggs Mix, scoop, bake 8 to 10 minutes turning once ( or until done) Cool, dip bottoms in tempered chocolate. eeyore |

| Yes, whole eggs seems strange to me too. I initially thought it was only coconut, suger and egg whites. But I will try this one as well! Thanks!

| Yes, it's whole eggs. A little less chewy and slightly more yellow. Very simple, very coconut taste. I think it really needs the chocolate. hope it works for you. eeyore |
