| Hi everybody, I have being baking for about 2 years now, I would like to know what is aceptable amount of fat content in butter to be considered high quality? thanks |

| In Europe, most "cooking butters" are 82%, and table butters 84 and higher, salted butter almost unheard of. N.A isn't that far ahead yet |
