Talking neo classic desserts plated

I'm looking for any websites for neo classic desserts plated with images and its recipes.
Also I thought of doing a chocolate and jaffa cheesecake with a malt biscuit base, wrapped with tuille paste and garnished with two spiral chocolate (dark and white) formed into one, but I feel it needs something more if you can help me out with this one that would be greatly appreciated.

How about some type of orange sauce as a pool of sauce on the bottom or to drizzle on the bottom of the plate. Also you can use a spiraled sugared candied orange peel to use along with your spiral chocolate just to add a little color to the dish.

There's too many things you can do to list. Definately something on the plate with some color. I always look in books for further plating ideas. Have you looked in any of the Chocolatiers cookbooks? Like the one on Neoclassical desserts?

I haven't ever seen a site that shows much on plating, on the web. Does anyone have a site they look at?

P.S. I'm not familar with Jaffa, what is it?
