HOW ABOUT BAILEY'S CHOCOLATE CHEESECAKE?

1-1/2 cup chocolate cookie crumbs
1/3 confectioner's sugar
1/3 cup unsweetened cocoa powder
1/4 cup butter
3 (8) pkgs. cream cheese, softened
1-1/4 cups white sugar
1/4 cup unsweetened cocoa powder
3 tb. all purpose flour
3 eggs
1/2 cup sour cream
1/4 cup irish cream liqueur

directions:
1. TO MAKE CRUST: mix together the cookie crumbs, confectioner's sugar, and 1/3 cup cocoa. add melted butter or margarine and stir until well mixed. pat into the bottom of a 9 inch springform pan.
2. BAKE in a preheated 350'f(175'c)oven for 10 minutes and set aside.
3. COMBINE cream cheese, white sugar,1/4 cup cocoa and flour, mixing at medium speed with electric mixer until well blended.
4. ADD eggs, one at a time, mixing well after each addition.
5.BLEND in the sour cream and Bailey's Irish creme, mix on low until blended. Pour ober baked crust.
6.BAKE at 450'f for 10 minutes. Reduce oven temperature to 250f and continue baking for 60 minutes. Remove from oven.
7. With a knife, loosen cake from rim of pan, leet cool then remove the rim of pan. Chill before serving. If your cake cracks, a helpful tip is to dampen a spatula and smooth the top and then sprinkle with some chocolate wafer crumbs.

the flavour can be changed by simply changing the liquer.

good luck.

Read initial thread guys....dinner with multi guests...if it were for two, I'd have said the fudge body dip and champagne with one glass.
One of my favorite things to do is a chocolate buffet....just totally chocolate.
One of the groups I'm in had a potluck last week and I took
sharffen berger 99%brownies
El Rey 70% meragines
Callebaut crisp thins
Nestle dbl choc dreams

Chocolate Velvet. Basicaly a ganache with liquor poured over a thin soaked sponge. Very rich! Another good idea is make choc tuille's in the shape of hearts and use as a garnish. Also, find your favorite truffle filling and spread it over a thin roulade sheet. Then cut out heart shapes. Two per plate...a little rasperry coulis...and a garnish...call it "Two Heart's"

Shroomgirl ~~

Love the idea of the chocolate buffet. Sounds perfect for my get-together. Just add some flowers and candlelight and it would make a gorgeous table . . .
